Our Pork Shanks offer a rich, flavorful cut packed with nutrients and collagen. Sourced from the lower legs of the pig, these shanks are filled with collagen-rich tendons, ligaments, and fascia—muscles that do the most work, making this cut one of the highest in gelatin-to-muscle ratios. Pork shanks are packed with connective tissue, making them perfect for low-and-slow cooking to break down the tendons and collagen, turning them into tender, gelatinous deliciousness. The best way to cook them is through braising, which allows the flavors to deepen and the meat to become melt-in-your-mouth tender.

Cooking Method:
- Brown each side of the shank at the base of a pot to develop flavor.
- Add filtered water, your choice of herbs and spices (like thyme, rosemary, or bay leaves), and bring to a boil.
- Reduce the heat, cover, and let simmer for about 2 hours or until the meat is falling off the bone.

Modern pork contains significantly higher levels of PUFAs than it did in the past, with conventional pork now containing the same amount of PUFAs as canola oil—definitely not ideal! This shift is largely driven by changes in the pig’s diet, specifically the mass production of corn, soy, and other PUFA-rich ingredients used in conventional feed. While pasture-raised pigs may have access to more natural grazing, they still require supplemental feed, which is often rich in PUFAs. As a result, even pasture-raised pork can still have elevated levels of omega-6 fatty acids, as the pigs’ diet directly influences the fat composition of their meat.
