Raw Skim Milk from 100% Grass-Fed A2A2 Jersey Cows, rotationally grazed on diverse pastures, soaking in the sunlight, and always connected to the land.

Never heated, this raw skim milk retains a wealth of heat-sensitive compounds that support your health. When cream is removed to make butter, the remaining milk is skim milk, and it’s a significant part of the whole milk’s nutrients.

Raw skim milk still contains many of the bioactive compounds found in whole milk, although some are reduced due to the removal of the fat. It contains anti-inflammatory and anti-microbial lactoferrin, oligosaccharides, natural enzymes, immunoglobulins, cytokines like TGF-beta, and the renowned “Wulzen Factor” (or “anti-stiffness factor”), known for its anti-inflammatory and anti-calcification properties. It also provides essential enzymes, B vitamins, calcium in their natural form—without the use of synthetic vitamin additives—and beneficial living bacteria.

    Skim milk is frozen soon after milking and cream separation to ensure it arrives as fresh as possible. Yes, it is perfectly fine to freeze raw skim milk. Freezing does not compromise its enzymatic activity, bioactive compounds, or vitamin content. In fact, Dr. Weston A. Price tested butter that had been frozen for a year and found its nutrient content remained fully preserved.

    Recommended Thawing Method to Avoid Chunks:
    Place the milk container in a large bowl of cold water on the countertop and let it slowly defrost—this typically takes 8-12 hours and works well overnight. Ensure there are no remaining ice chunks before shaking the container vigorously to reincorporate any separation, then transfer it to the refrigerator.

    The A2A2 Difference

    Many of our customers have found they can finally tolerate dairy again! All of our cow dairy comes from tested A2A2 cows, meaning it contains only the A2 casein protein, which is easier for the body to digest compared to A1 casein. Historically, humans consumed A2 dairy from traditional breeds of cows, goats, and sheep, which naturally produce this form of beta-casein. The shift to A1 dairy occurred more recently with the rise of modern commercial breeds like the Holstein. Unfortunately, many cows today produce a mix of A1 and A2 casein, which can be harder on digestion.

    For those sensitive to traditional dairy, switching to A2A2 dairy can provide a smoother, more comfortable experience without the usual discomfort.
