In fact, they pack more nutrients than the chicken breast, making them a powerhouse of goodness. The gizzard plays a key role in chicken digestion, working as a very active muscle to break down food. This makes it incredibly collagen-rich, offering even more health benefits for your joints, skin, and gut. To unlock all the collagen and turn it into rich, gooey gelatin, chicken gizzards need to be cooked low and slow. When prepared this way, they’re a delicious and nutrient-dense addition to your meals that will leave you feeling nourished and satisfied.

Unlike conventional chicken, which is raised in factory farms with heavy antibiotic and vaccine use, our chickens are mobile pasture-raised, moved to fresh pasture daily, and never confined in industrial barns.   • LowPs™ Chicken Gizzards
Chicken gizzards contain a significant amount of connective tissue due to their constant use, so low-and-slow cooking methods help break down their toughness, resulting in a melt-in-your-mouth texture. To braise, add gizzards to a pot or Dutch oven, fully submerge them in water or a flavorful liquid (like broth or wine), bring to a boil, then cover and reduce the heat to low. Simmer for 1.5–2 hours until tender. If using a slow cooker, braise on low for 4–6 hours or high for 2–3 hours. Once tender, gizzards can be enjoyed in tacos, on top of rice bowls, or mixed into a hearty potato hash.

- Brazilian Moela (Brazil): Gizzards stewed in a rich tomato sauce with onions, garlic, and peppers, typically served over rice.
- Gizzards in Tomato Sauce (Italy): gizzards are often braised in a flavorful tomato sauce with garlic, onions, and herbs like oregano and basil. The gizzards absorb the rich flavors of the sauce, making them tender and aromatic. Serve over pasta, polenta, or with crusty bread to soak up the sauce.

So impressed

My mom is sort of a chef and a meat snob. Especially when it comes to chicken. My randfather used to be in the chicken business which is where she learned about good meat. I was honestly a little nervous to give your chicken to her because I was already in love without even trying it. She had told me multiple times already that Nourish chicken is the best chicken she has ever had and cooked with since she can remember! Our chicken contains over 200% more of the health promoting Stearic Acid, and 54% less of the metabolism damaging Linoleic Acid (an Omega 6 PUFA found in seed oils).

Modern chickens contain significantly higher levels of PUFAs than they did in the past, with some sources even claiming that chicken is now the highest dietary source of linoleic acid (an omega-6 PUFA found in vegetable oils). This shift is primarily due to changes in the chicken’s diet, driven by the mass production of corn, soy, and other PUFA-rich ingredients used in conventional feed. And while pasture-raised chickens may have access to forage, they still require supplemental feed, which is often rich in PUFAs. Therefore, even pasture-raised chicken can still have high levels of omega-6 fatty acids, because what chickens eat directly impacts the types of fat and quality of meat you consume.

Chickens raised on pasture have access to a more diverse, nutrient-rich diet, including supplemental feed, fresh grasses, plants, and insects. This variety enhances their nutrient intake, which is then reflected in the quality of the meat you consume. Pasture-raised animal products are often richer in fat-soluble vitamins. For example, vitamin D levels increase with sunlight exposure, as animals synthesize it in their skin and store it in their fat. Vitamin K2 levels are also influenced by diet, with grass-fed animals typically containing higher amounts of this essential nutrient. Truly pasture-raised animals may also contain higher levels of beneficial compounds like polyphenols, which support gut and overall health.
