How to Cook a Pasture-Raised Turkey
Pasture-raised turkeys are more nutrient-dense than conventional store-bought birds, containing more vitamins and minerals, less Omega-6 polyunsaturated fat (PUFAs), no drugs, and none of the chemicals often found in packaging. However, since they are raised differently (getting daily outdoor exercise instead of being confined to barns) they develop stronger muscle fibers and less intramuscular fat. This means they cook faster and can dry out if treated like conventional, fattier turkeys. To get the best results, roast at a slightly lower temperature, baste often, and use a meat thermometer. Cook them slowly, and you’ll be rewarded with rich flavor and a tender texture no conventional turkey can match.
